When I was little, I was a bit of a picky eater.  I liked lots of different foods, but I also had a list of things that I refused to even try.  Near the top of that list – PINEAPPLE.

Because of that, I never tried these when Nanny made them.  I don’t remember her ever making them after Grandpa passed away.  And it wasn’t until several years after that, that I finally tried pineapple and decided it wasn’t as horrible as I’d imagined.  It was even pretty good.

So when I was looking for some great cookie recipes to share, and Mom suggested these, I knew I’d have to make them and try them at last.  And guess what – they’re delicious!

Cmas Tropical Oatmeal Cookies

Here’s all you need:

  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup shortening
  • 1 egg
  • 1/2 cup crushed pineapple, drained
  • 1 1/2 cup oatmeal
  • 1 cup flour
  • 1/2 tsp soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 cup chopped nuts

Preheat oven to 375.

Cream sugars and shortening together well.  Beat in egg and pineapple.  Add remaining ingredients and mix well.

Tropical Oatmeal

Drop onto ungreased cookie sheet and bake for 15 minutes.
