.Disclosure #cbias #BakingIdeas #shop I’ve had salted caramel on the brain for weeks now.  Everything I try to make, I’m thinking “Hmm, wonder if that would be good with salted caramel?” You can get worried when you start seeing salted caramel chicken recipes.  Until then, enjoy the yumminess!   This week, I’ve been working on an idea I had to combine plain M&Ms, pretzels and salted caramel into a yummy thumbprint cookie.  Sometimes I go overboard with my baking ideas, but this one turned out to be spot on!

MMBaking is better

Here’s all you need:

  • 1 1/3 cups butter (that’s 2 sticks + 5 1/3 Tbsp) softened
  • 3 cups flour
  • 1 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • small box vanilla pudding
  • finely chopped pecans and/or sugar for rolling cookies in
  • pretzels (I like Snyders Snaps)
  • 1 cup caramels (I used Kraft Caramel Bits)
  • 2 Tbsp heavy whipping cream
  • coarse salt
  • plain M&M’s

Beat the first 6 ingredients until well combined. (I beat in only half the flour at first, and then add the rest in and beat again).  Chill dough for at least an hour before baking cookies.

Preheat the oven to 350.  Roll the dough into balls – I’d say slightly larger than 1″.  Roll in chopped pecans or sugar.  Set each ball on top of a pretzel.  Press your thumb into the center of the cookie (go deep – you want to just feel the pretzel under your thumb).  Chill in the freezer for 15 minutes (helps them hold their shape better while baking).  Then bake for 10-12 minutes.

While they are baking, heat the caramels and cream in the microwave to melt.  Microwaves vary, so watch closely.  I heated for 30 seconds, then 10 seconds, then 10 more seconds, stirring for 30 seconds each time I took it out.  When the cookies are cool, spoon just a dab of caramel into each thumbprint.  Sprinkle with salt and top with M&Ms

These are great with milk or a great cup of coffee!  The pretzel on the bottom is a kind of quirky surprise, but my family loves the salty sweet taste of these treats.  The caramel firms up enough not to be messy, but not so much that it’s sticking to your teeth while you’re eating them.  And the M&Ms are the perfect complement and make them look so festive.

MMSalted Caramel Thumbprint Cookies

I had just finished taking the pictures for this post and stepped into the other room to look at them on the computer before putting everything away.  When I came back I found a Cookie Monster stealing my goodies!  It’s a good thing the pictures were ok.  (Don’t ask what he has written on his hand.  I have no idea.)

You can find M&M’s for these cookies at your local Wal-Mart like I did.  There’s a huge selection of varieties to choose from in Medium or Large sized bags. And you can make it an even better deal with this great coupon!

And now a contest.  You could win $250.  That can buy a lot of M&M’s!
