The first thing that caught my eye about the knives that Core Kitchen sent me to review were the great colors. They’re so modern and pretty! But they are more than just pretty knives. They have a non-stick coating to keep food from sticking to the blade. They are made of high carbon stainless steel, so they will stay sharp for a long long time. And the non-slip grip makes them so easy to hang onto, even with wet or messy hands. I noticed right away how sharp these knives are, and since I can be a bit of a klutz, I was so glad to see that each knife came with a safety sheath. Yay! I won’t be cutting my fingers on these knives every time I reach into the drawer.
The knives I received, and the ones that the winner will receive, includes an 8.5″ bread knife, and a 3-knife set including a 7″ Santoku knife, a 4.5″ utility knife, and a 3.5″ paring knife. I can’t think of a single kitchen cutting job that these knives won’t handle.
When I was trying to come up with a recipe that would best use as many of these great knives as possible, I remembered an idea I had last time J-Ella and I had a girls’ night out. We went to one of our favorite places, Buffalo Wild Wings, and shared a big batch of our favorite item there, sweet barbecue boneless wings with ranch for dipping. It’s so very yummy, but so very messy, and I started to wonder if I could make a barbecue chicken salad sandwich with that great mix of barbecue and ranch sauces. It’s time to see if that is as yummy in real life and it sounds in my head!
B-Dubs Inspired Barbecue Chicken Salad
Here's all you need
- Rolls, Crescents, or Good Bread for serving
- Lettuce for garnish (optional)
- 8oz Cream Cheese (softened)
- 1/2 cup Mayonaise
- 1/4 cup Pickle Juice (may substitute vinegar and salt to taste)
- 1 packet Original Hidden Valley Ranch Dressing Mix
- 3 cups Diced Breaded Chicken Strips (I deep fry before dicing to get a really nice crunch!)
- 1/2 cup Diced Celery
- 1 cup Frozen Corn (no need to cook)
- 1/2 cup Diced Tomatoes (I used cherry tomatoes cut into 1/8ths)
- 1/2 - 3/4 cup Barbecue Sauce (Just enough to coat the diced chicken. I drizzle and stir, drizzle and stir.)
|Mix dressing ingredients well. This is also a great dip all by itself|
|Gently toss diced chicken in barbecue sauce to coat. Add veggies and dressing and toss gently again.|
|Assemble Barbecue Chicken Salad Sandwiches.|
Umm – yeah – I had already had dinner when I made these. I was going to have one bite. I finished the whole things and was tempted to go back for more. They are absolutely as good as I’d imagined. Try them!
