Some days you just need a quick and easy dinner and anything will do. Pizza, fast food, or sandwiches might be your go to dinner ideas on those nights. But sometimes you need even a quick dinner to be special, and I’ve found a “secret ingredient” to make those dinners shine! It’s Land O’Lakes Sauté Express® Sauté Starter.
This week is just crazy at Chicken Scratch. Today we have a funeral for a dear friend, plus J-Bear has orchestra practice and I have a group bible study. Then on Wednesday we have our church’s Fall Festival and I was “blessed” to be delegated as chairman this year. (Um, yeah, I’m gonna stick with blessed – sigh). Every night will be a busy night this week, and I can’t feed my family pizza four nights in a row, so today I whipped up a great meal in a jiffy with Sauté Express® Sauté Starter. It was easy to find while I was doing my weekly shopping at Wal-Mart.
I used the Parmesan-Crusted Pork Chops recipe from the Land O’ Lakes website. There are lots of great quick dinner recipes on the site, so you should go browse now and find something for your next busy night.
Since I know it will be a cold day “you know where” when my family agrees to eat kale, I swapped that side for some yummy Parmesan Risotto and Italian Green Beans. Italian Green Beans are just regular green beans with diced tomatoes, onions, and a little basil and Italian seasoning cooked in. Easy peasy, I tossed them together and put them on to simmer while I made everything else.
Next I got the Parmesan Risotto started. You can find that recipe at the end of this post. I got it up to the part where you simmer it for 15 minutes and then moved on to the Parmesan Crusted Pork Chops.
By this time my little stove was getting crowded, but I got the pork chops breaded and into the frying pan, and by that time I’d only been working for about 15 minutes.
Just 15 more minutes to get the pork chops done all the way through and the Risotto finished, and dinner was ready. I love it when “quick and easy” and “special sit down family dinner” can happen all on the same night. Thanks Land O’ Lakes!
Here's all you need
- 1 tablespoon Olive Oil
- 2 cubes Land O' Lakes Saute Express in Garlic & Herb (one to saute onion - one for later in the recipe)
- 1 cup Onion (minced fine)
- Salt & Pepper (to your families taste - I used about 1/2 tsp salt, 1/4 tsp pepper)
- 3 cups Water
- 1 cup Arborio Rice
- 1/4 cup Milk
- 1/2 cup Parmesan
- 3 tablespoons Green Onion (snipped from the green ends - plus extra for garnish if desired)
|Melt 1 cube Saute Express with Olive Oil over medium heat, then add minced onion and saute until translucent. Season as desired with salt and pepper.|
|Add water and bring to a boil, then add rice and simmer over medium heat for 15 minutes. Stir frequently.|
|Melt reserved cube of Saute Express, and add to pan along with milk, parmesan, and green onions.|
|Simmer 2 minutes and then keep warm until ready to serve.|
