Well, the holidays are over. I’m on the mend from my annual bout of the croupy crud, and my daughter has announced her engagement.  All-in-all, quite a bit more excitement than we are used to here at Chicken Scratch!

The Christmas goodies have all been eaten, so it’s time for me to make my family a little something sweet.  But I’ve been trying to eat healthier, so I knew I’d be setting myself up for a huge failure if I made something too sweet.  These great cookies hit the spot!  They are actually reasonably healthy, with just 93 calories and 4.1 grams fat per cookie.  For comparison purposes, your standard homemade Tollhouse Chocolate Chip Cookies have 120 calories and 7 grams of fat per cookie if you make your cookies small enough to get 5 dozen cookies (I never do!).

Nanny's Applesauce Cookies

Here's all you need:
  • ½ cup Crisco
  • 1 cup Sugar
  • 1 Egg
  • 1 cup Applesauce
  • 2½ cups Flour
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • ¼ tsp Cloves
  • ½ tsp Cinnamon
  • ½ cup Chopped Nuts
Instructions
  1. Preheat oven to 375 degrees.
  2. Mix ingredients in the order given.
  3. Drop by spoonfuls onto a cookie sheet.
  4. Bake for 10 minutes.
  5. Makes 3 dozen cookies
